Further information
The "climats" of Burgundy have a long history, dating back to the Middle Ages. Cistercian monks played a crucial role in the delimitation and classification of the "climats", by carefully observing the differences in wine quality produced on different plots. The "climats" are hierarchical, ranging from regional appellations to village, Premier Cru and Grand Cru appellations.

The Côte de Beaune is world-renowned for its dry white wines, mainly made from the Chardonnay grape variety. Appellations such as Meursault, Puligny-Montrachet, and Chassagne-Montrachet produce wines of remarkable finesse and complexity, considered among the best in the world. Although less dominant than the production of white wines, the Côte de Beaune also produces quality red wines, made from the Pinot Noir grape variety. The Pommard and Volnay appellations are renowned for their powerful and elegant red wines.
